OneNote

I was wondering this myself. It looks like the default Quick Notes is the only category we can use. Is that correct?
 
Not really the gist of my question however to answer yours..theres a convoluted "workaround" to this.
If you log onto your windows live account from a PC browser, mouse over "Skydrive" and select new onenote notebook. Create as you wish then switch to your phone, open your skydrive and youll see the onenote file, click on this it will open in your browser. Now close your browser go to the app and open....VOILA its now there and you can use this from now on.
My question was more to do with moving pages once created, specifically I have a "open" and a "Closed" page and I wish to be able to drag and drop from open to closed, as you can in PC based apps
 
Ah, I see. It's ridiculous that we need to do all that for new categories on the mobile app. Thanks for the tip, though!
