What is going to happen with the threshold builds now that anniversary has rolled out?

If you're staying on it whether a business or using the Defer Upgrades option, you won't get the Anniversary update for the time being, but you'll still get security updates.

What is going to happen with the threshold builds now that anniversary has rolled out?

and for phone, we'll still have functioning phones but support will slowly decrease over a period of months. I'm guessing by next year when redstone 2 gets released, apps will no longer be working properly
