And, by "Anime", I'm referring to the Japanese context, so, yes, it includes cartoons (the reverse is also true)

My favorite ones are:
-Puella Magi Madoka Magica
-Lucky Star
-The Melancholy of Haruhi Suzumiya
-Fairy Tail
-Baka to Test to Shokanjuu
-Fullmetal Alchemist
...and many others

Oedo 808 Cyber City Trilogy. Had them years ago on video. Wish i had kept them impossible to get hold of on DVD.

Katekyo Hitman Reborn, rewatched the whole thing 4 times!
Fairy tail wasn't bad either.
Watched the first few episodes of FMA:B on Animax, seems pretty nice, will watch it when I have the time.

Full moon wo Sagash_ite (ignore the underscore!) is my all time favorite, also the saddest anime I've ever watched (not that I've watched many, but still..)

I've watched a great deal of anime in my day and I always thought Neon Genesis Evangelion was the cream of the crop in terms of hitting numerous levels of anime goodness from drama to humor to action to self reflection to inter personal relations. It has it all and still manages to blow your mind regardless of which conclusion you watch.

I have 3 that vie for the top spot for me: Cowboy Bebop, FLCL, Trigun. It's more like Cowboy Bebop is on top, and FLCL and Trigun fight for the close 2nd.
