why does the wifi data go so fast from my account

I have an at&t hotspot that gives 5gb a month. after 3 days I had used 1gb!
without an address in the US I cannot get an unlimited option.
I don't watch videos or do streaming.
I use it for email, weather and news.
also for lots of google maps. which I print to a pdf to be printed offline.
is the printing actualy downloading?

Of course printing necessitates downloading. The PDF documents are created on somebody's server, then downloaded to your computing device through your hotspot, and from there it's sent to your printer. Everything you do online results in an exchange of data between your devices and the internet. That data necessarily flows through your hotspot and is subtracted from your data limit.

That being said, 1GB in three days still sounds very excessive for your usage. That you failed to tell us what kind of device(s) you're using makes it pretty hard to give you any tips however.

If you're using WP8.1 I would suggest taking a look at the DataSense app and see if you find anything suspicious.
