WP8.1 IE and mobile websites

Since upgrading to 8.1 it seems lots of websites I visit regularly give me the desktop rather than the mobile version and the only way to get the mobile one is by using a
private browsing tab.

Is there any way to force mobile browsing or force private browsing all the time?

You can try this. IE>Settings>Website preference. Select mobile or desktop version.
