I am just wondering if there is a way to see when apps were installed or updated, just like you could back on Windows Phone 8.1?

Not at the moment but AFAIK it is promised to be added ...

open store -> hamburger button -> my library
It lists the recent installed/updated apps and games both on pc & phone.

You can also reinstall the app from there, if it's not installed

This doesn't show the recently updated apps only recently installed

Yep, that's now what we are talking about, as I said above currently there is no way to see update history, the only way to keep track is disabling aoutupdate...
