Can I use home server email as primary account instead of MS account?

I don't want my Windows Phone 8.1 syncing contacts to the cloud, and I read that this can be disabled if I set a Microsoft Account as secondary account. I've already reset the phone and skipped the initial sign-in page on the Windows Phone setup wizard you get after you first boot. I will add my accounts via Settings>Email+Accounts now.

So, if I have a home email server, can I use that account "someone@home.com" as my primary email address and have contacts and what not "sync" there, and use my Microsoft Account to do the rest of the stuff on the phone (like app updates)?
And if I can use "someone@home.com", will OneNote and OneDrive sync there?
 
Go to Settings > email + accounts

Tap on each account name and uncheck the box for what you don't want synced there and check the box for what you do... I don't have any contact info synced to my Microsoft account. So long as the email client on your home server can perform the function, you should be good.
