I've tried using Quiet Hours, even being prepared for MS to spy on me by having Cortana fully functional, but since I've turned it on my phone seems to run slower and act a little odd. I mute the phone at night but I often forget to turn the volume back on in the morning and have missed some important calls. So, is there any way to just have this piece of functionality without all the MS nonsense they insist on putting with it?

I don't know why you'd think that Cortana would enable Microsoft to spy on you, or why you think Microsoft is interested in monitoring you (there must be millions of more interesting people around).

You wouldn't need to mute your phone with Quiet Hours enabled. I'm not sure why enabling the feature would slow your phone down, it's not an issue I've seen raised before.
