Best Note Taking App

Notepad and Evernote are my top two after trying almost a dozen. I choose Notepad as I needed access to my notes offline too and not have to pay for the privilege. Most note taking apps don't have the ability to group them into folders/categories which eliminated most for me.

Free, clean interface (no ads) and supports folders to keep them organized. Developer is looking to improve it on xda-developer site too so hopefully improvements are coming.

UPDATE
I'm now using the following, MetroNote (better with useability when viewing/editing) and Feather Notes (easily filter notes based on Tags so you can quickly see your groups but when editing, to scroll becomes very difficult). Both use Simplenote to backup with which is free too and works well. Even with the two programs, they sync quite well between each other...if only the two developers could merge their ideas together the result would be even better.

I have gone through tons of note taking/to-do apps and haven't found anything that tops OneNote. The formatting options allow you to create any kind of list you can imagine (bulleted, numbered, checklist). If you use it on your tablet, make sure you download the OneNote app. The handwriting recognition using a stylus is amazing. If you have access to your SkyDrive account, you can get to your notes on your phone, your tablet or any desktop.

For jotting down quick, handwritten notes, I use InNote. It is, by far, the best app of its kind out there. It's smooth and quick. You can even share your InNote notes to OneNote.

I haven't found anything that tops one note. I have it on my surface pro, wife's iPhone, my Lumia 920, our iPad and now on my LG G2. Downside it isn't available on my iMac as an app (web browser only) I love the family room function of windows phone as it let's us share notes between Microsoft Accounts

For information EverNote doesn't allow you to see your notes when you don't have a data connection (for example when roaming on a trip) without having the premium subscription. This is the reason I went back to OneNote.
 
My wife wants a note app that will work "like siri." IE, you can speak and it will transcribe the speech into written words into a note app. Anyone know of one?

And btw, I use Note+ and it's pretty nice and easy.

OneNote. From anywhere, hold down the windows key to bring up the speech dialogue. Say "note" followed by the audio note.
 
Right, OneNote will make a voice memo, but it won't transcribe the voice to text, like on an email or SMS.

I was not aware of this behavior, but I just tried it and it works great! It makes an audio clip and it transcribes what you say.
 
Wow, you're right. I didn't recall that this worked like this before, but it makes OneNote even better.
 
Wow, It does work to hold down the windows button, say "Note" and then say the words of the note. OneNote recorded it and transcribes it into text!
 
To all those saying OneNote is best, I wonder if I'm missing something.

OneNote is OK (for me) but a critical aspect it seems to be missing is the ability to organise notes into notebooks (like I can in Evernote - e.g. I'd like to create DIY, recipes notebooks etc). You can't even do that in the Onenote web app - again, as far as I can tell - I guess it's only available in the full program? I'd prefer to use onenote on my phone as then I can access it under my MS login, but Evernote seems more flexible/powerful.

If I am missing something here, could someone let me know?!

I use OneNote on all my computers and on my Windows Phone 8 Lumia 822 and all of them organize into multiple separate notebooks, chapters, and pages, etc. They all sync, and are always available on any of the devices and through Internet Explorer. It can track web pages, notes, voice recordings, photos and much more. It can sync and share with others using Rooms, Sharepoint, and Skydrive.
So, EverNote can keep information in separate chapters. What else do you think makes it seem more flexible/powerful?
