Just curious if anyone knows or has done this. Can you just stop your next installment and turn your phone back into AT&T and just use a cheap GoPhone option? Or do you have to continue paying the installment plans regardless? Thanks in advance.

Turning the phone in to AT&T only applies when you are doing a trade in for a new phone from their stock (not Go-Phone). You would have to pay the balance on the phone, cancelling Next. Then the phone is yours and you may unlock it sell it to someone to recoup some money.

I guess it depends on how soon after starting your Next plan that you wished to end it. Technically they should have a return policy that should allow you to opt out within a certain timeframe. However, I don't think it is going to be cheap to get out of it once that milestone is reached.
