DEVICE RECOMMENDATION - Surface for a Conference Room

I work for a university and my supervisor has asked me to look into recommendations for a Surface device for our new conference room.
The room has a TV and camera that just plugs into a computer via HDMI and USB-A. So the computer would mostly be used for MS Office/Google Docs, and displaying that data via those data cables. My boss has also taken an interest in the 2-in-1 form factor for purposes of mobility around the offices.
So that leads me to the Surface Pro 7. My question is: Memory. I'm not sure what kind of RAM pushing graphics to a monitor requires, but I see a significant jump in price from 8GB to 16GB. But I'm thinking long-term, so if it's worth the investment for our office to have more RAM for the above purposes, then I'll make that recommendation to my boss.

What is everyone's thoughts?

8 GB should be fine for what you're doing but I'd still go 16 if it fits your budget. Better for the future. Also, the Pro 7 doesn't have an HDMI port so you'll need a USB-C adapter, hub, or dock to connect to the TV.
