Currently my email tile displays the number of unread emails in my inbox since the last time I've checked my emails on my phone on the home screen. Is there a way to get it to display the total number of unread emails I in my inbox instead of just since the last time I've checked?

There's no way of doing that with the standard mail app. Third party mail apps may have this functionality.
