How can the OS change on the fly like this?

I have no idea how this can happen but here goes:

My mobile data works for a 1 or 2 and then stops. I have no idea why but considering the immense number of bugs my 735 is throwing up, it is one of many.

What I cannot understand is that I plugged my phone into the Recovery software in order to go back to 8.1, the application got stuck but the mobile data started working again.

Incidentally, taking the simcard in and out, performing resets or editing manually the APN settings achieved nothing.

Go figure...
