How do you 1) switch between apps / 2) remove running apps in background on a lumia 640 phone?

1) long press back button
2) go to Battery Saver on app list (or Settings menu) and choose from there

In case you mean closing apps on question 2: Long press back button + drag the app down (or hit "x" at the top)
