How to restore my phone?

My lumia 640's keyboard turned chinese recently. Had to elect "RESET".

Where have I gone wrong here -

restore back up phase after reset - -During the login with email acct it keeps telling me to verify my identity by SMS'ing a code to my sim no. BUT how do I switch out of the 'restore back up phase' to access the sim to read the code without cancelling the restore??

In this case, can't you apply another way of retrieving the code (e.g. via email)?

It will not offer that. Just theSim no.
