My gf's little bro has an iPod touch, and we need a way to message. WhatsApp requires a phone number. Any suggestions?

Kik. Works on every major smartphone platform, including BlackBerry. Faster than BBM and includes BBMs feature of showing whether the recipient has seen the message, and it's a free download.

My son wanted to text on his ipod touch so I put text+ on it. He is five so he sends me some interesting texts when we allow him to get on wifi.

GroupMe works pretty well. The iOS app is good, while the WP app needs a bit of work. But the good thing is that GroupMe can send and receive messages through regular text, plus you can message from their web site. You will need a phone number to receive a pin code, but just enter it on the iPod touch and your good to go. :)

I use WhatsApp to chat with friends who have iPhones, Androids and BlackBerrys.

I'm currently using TalkBox for voice messaging. It also supports text, photo, and location messages.
