Lumia unbranding and UK Cortana help?

Hi all,

I'm new to WP

I have a Lumia 635 on o2 and was wondering how I can unbrand it?
-Will this effect the usage, further updates, my sim lock etc and is it hard to do?

Also does anyone know when Cortana is coming to the UK?
