What functionality do I lose compared to Windows Phone? Cortana is obvious. What about notification center? Ability to reply to texts?

You'd lose the ability to reply to texts because Apple doesn't allow access to those APIs. Most everything else is intact and Notification Center should still work, besides Cortana as you already know.
