Can anyone explain me what is the difference between a country variant or a carrier variant on an update?

Carrier variant is made for a certain carrier (like Orange or Vodafone), but a country variant is not made for a single carrier ... I usually prefer country variant, for faster updates (as it does not need an approval of that certain carrier) ...

Yeah, I would install country variant - Lumia 520 Country variant 3056.40000.1349.2002 in your case ...
