Uninstall Or At Least Remove Defaults of OneNote (Modern Version)?

After experiencing significant lag, random crashes, and reloading the Modern Version with 8.1, I switched to the desktop version. OneNote 2013 is a significantly better product and I want to make it the default for all actions related to OneNote.

At the moment in the "Action Center", the note tile will default to the OneNote (Modern Version). I tried to set the defaults from "System > Default Apps > Set defaults by app" but "ONENOTE-CMD" cannot be unchecked. And to take it further, I cannot uninstall the Modern Version from the Store nor can it be uninstalled from the Apps & Features section, it's greyed out. Also, I'm using a non-touch screen PC on Windows 10.

I'm having a similar issue with my surface. I cannot set the desktop version to open by default. New issue for me with upgrading to windows 10.
