Just wondering if this is something I should do, since I've read that unlocking it is easy to do. From what I've gathered, I'd be able to do WiFi calling (which I can already do with WhatsApp), and I'd be able to get updates directly from Microsoft. Is there anything else? Thanks!

SIM unlocking will not make any difference with how you get updates.
In order to get updates directly from Microsoft, you'd need an unbranded device. Removing the carrier lock just means you could use your device on another carrier, such as T-Mobile. But since it's branded to AT&T, you still have to wait for AT&T to release the update.
