Why doesn't my phone icon stay on the main display screen?

I have had a new nokia lumia when I had it there was a phone symbol now it has disapeared

I assume you mean the Phone live tile disappeared. Probably, unknowingly, you unpinned it. Go to apps (swipe towards left) and look for Phone, hold it for a moment to reveal the menu and tap 'pin to start'.
