Windows 10 mobile ROM for iPhones

I have seen in past people with Mac and installing Windows 10 on them which was working perfectly fine. If it is easier to achieve it on desktop/laptop, will it not be easier for them to them custom roms for iphones like they did for Xiaomi?

Definitely not.

iPhones have relatively unique and custom hardware and are much more locked down than the Macs. Windows 10 Mobile won't run without significant work, and that assumes we have complete freedom on the phone, which we don't.
One way or another, it ain't going to happen. All but impossible.
