New to Windows 10. Coming from a Mac. Pretty impressed with the OS. Question about multiple desktops. Is it possible to have a pinned app pinned to a certain desktop. So if I click the pinned app on any of my desktops rather than open the app in the current desktop it switches to the one its open in or opens it in the desktop I have set it to open in?? Also I'd like to change the shortcut to switch desktops to windows key + left/right arrow. Is that possible?

I believe the answer is partially. In settings search for Multitasking. Select the option to show windows on All Desktops. Open apps will then show on all but switch to the running desktop. However an app will always open on the active desktop.

For shortcuts, no built in way. Several sites reference this tool as being able to "remap windows shortcuts" https://www.autohotkey.com/ (never used so cannot comment on suitability etc.)
