Last night I was talking on the phone with very low battery so the phone inevitably died. I charged it and came back two hours later to find that it still didn't turn back on, despite the Windows button still flashing (indicating that it's charging).
Tried to both power it back on regularly and then also soft reset it as well, but to no avail. I left it plugged it and when I woke up this morning, the Windows button is still flashing but the device still won't power on!

I doubt that the phone's completely bricked though, since the phone only powered off because I continued a call unplugged despite intermittent low battery warnings. Any ideas?

It's most likely that you've completely drained your battery, causing irreversible chemical damage (known for Lithium-based batteries). Your best luck would be to have it checked in a service center, telling them what happened exactly so they would know that they may just need to replace the battery.
