I think the only complain I have is when I am wearing my stereo BT headset. If I click on the headset to end the call, the music will often start playing.
Yes, this is exactly tthe problem. Its consistent. Also happens when using wired headsets as well. lets say you are listening to music, press pause, disconnect your headset and walk into a meeting. The music will just start playing from the phone in 5-30 seconds. This is bad design.
My ssolution has been to use "stop the music" app. Not great, buy it saves me from the embarrassment.

Go to settings
Tap Airplane mode and turn on.
Should turn off all wifi and cellular data
Then turn back on.
Music should be off and volume controls back to normal.
This works if you were playing music online.

I figured out how to turn the music player off. Create a playlist with 1 song, tap it and make it play, while it's playing tap the 3 dots, the name of the song will come up, tap the left hand side and a box will appear, tap the box to put a check in it, then tap the - (minus) sign at the bottom, it will stop the music. You can do this with a larger playlist but it will take much longer to put a check mark in all the songs in order to tap the -(minus) sign at the bottom. After you do this the player is shut off. When you tap the music tile the next time it will not resume, you select a song, album or playlist you want to play, once the music starts and you listen for a while and you want to shut it off again, slide over and select that 1 song play list, bring it up, tap it to play, then tap those 3 dots ... put a check mark in that box and hit the - (Minus) sign at the bottom and walla, it shuts off again.
