GDR3 to 8.1: Update was downloaded but could not be opened

On WP8 GDR3 on my Lumia 925 (Amber) and receiving the error I just mentioned when I try to update to 8.1. all of the prerequisite updates worked fine, but failed on 8.1... tried 6 times.

Is there a reason why your Lumia 925 is on the Amber firmware and not Black?
