I searched but didn't see anything, but I am curious if using a mvno would cause a delay in my updates when they come out or does it matter when att releases. I am currently using h2o wireless. I am kinda thinking that doesn't matter.

The updates for a phone variant are always dependent on the carrier's ROM running on the phone, not the carrier's service

Yeah I am currently researching debranding the phone so I would receive updates faster, currently worried if I would lose my "4g" service and bricking the phone. Not sure how hard it is to brick a lumia phone. I came from a Samsung Android and I hear that Samsung is harder to brick(Don't want to get flamed for this, that is what I have understood and for me, I never bricked it either). The other is, that it would void the warranty as well. Also my phone is not unlocked, if I use another countries' "country variant", would I have a sim error when using an AT&T sim.

Nope you wont be getting any errors when flashed to another country variant ROM. Also you wont be losing on the so called 4G, it might just show as H+. You would be losing on the double tap to wake feature though, you would get data sense and other features since ATT locks them. To suggest I would say flash the Indian variant since it has already received the official Black update

I would thought it would cause a SIM error. Also is it easy to brick the Nokia Lumia phone? Which leads to the question is, is it easy to unbrick?

None of the Lumias I've owned have bricked but not everyone has had the same luck. But yes, its easy to unbrick a Lumia

One last question, I was looking at the frequency for India and it doesn't have all the bands for that country. Since it would be using an India rom would my phone only work with the frequency supported in that country? Seems I read it does affect it. I know the India doesn't use the 850mhz band.
