Orginally came here with only 1 or 2 things in mind but after reading some of these, now I want more!
1. My original wants: FLAC & MKV support. I know you won't hear the difference from FLAC & a good MP3, but it's a matter of convenience as a lot of my music collection is in FLAC, and most of my movies/shows are MKV. Would be great if I didn't have to convert them every time I want to put them on my phone.
2. Easy way to close apps - I agree that backspacing endlessly through an app can get a bit tiresome, especially when it seems there is a task manager there (hold back). Why not just put a little cross at the top of each app in the task manager?
3. Separate volume controls - Not a huge hassle for me really, although I tend to forget to turn it back up once I've put the sound down for a game or something, so phone ends up being on silent when I don't want that.
4. App pricing on par with Android/iPhone. Coming from Android it's quite noticable that there's a price jump in the market, and even more noticable that the price is NOT synonymous with quality!
5. Ability to customise live tiles. This may be a bit complex, but if a simple app to make & change live tiles could be made that would make my day. Some of the tiles are so boring, it'd be great if you could spice them up a little yourself!
6. Equaliser to work with wireless headphones. This was an issue with the stock android player as well, but I was able to find a music player that did it (Poweramp). I don't understand the reason for making the equlisers for wired headphones only? Maybe someone could enlighten me?
7. More file system access. I get the feeling some of my disk space is disappearing somewhere, but can't be sure because all I can see are the standard media/documents folders. Mind you, I can definitely see the reason for this, more access could be just as bad!

8. Ability to send any files as attachments to email! Didn't come across this till yesterday and it was a right royal pain! This would work nicely with a file manager or something, hint hint.
Other than more apps (not a windows phone 8 feature issue), that's my list. Shouldn't be too hard should it?
