I downloaded the UC Browser a couple of days ago and so far I like what I see. I also downloaded the app for my Windows tablet as well. I was wondering is there anyway to sync the browser together so my bookmarks etc show up on both? Also is there anyway to make the UC Browser my default browser?

Nope you can not set third party apps as default in windows phone 8/8.1. But I know this one , if you have windows phone 8.1 and windows 8.1 on your desktop(with ie11) it will sync your tabs / bookmarks and browsing history+passwords.
