Video preview thumbnail

I searched the forums and found a few threads, but didn't want to necro any of them. Besides my question is generally specific.

I know you can't change the video preview thumbnail from the phone, so I was wondering what the quickest and easiest way to change the thumbnail would be on my Windows 8 desktop PC (for all types of video. AVI, MP4, and MKV if possible) and would that change stick if I then transfered the video to my Windows Phone?

I'm thinking that if you change the thumbnail manually and then transfer the file then it should display your altered thumbnail. The only reason it wouldn't is if the thumbnail is generated from a specific point in the file. This is honestly the kind of thing you'll have to experiment with to find out.
