With the 8 gig of RAM flavour of the i5 you should be fine. Be aware though that Hyper V does not like the connected standby sleep state that the SP3 uses. It can be changed to hibernate, but normal sleep is not an option. In real life it just means a few extra seconds to start up.
I am not an expert, but I had a the I5 with 4 gigs of ram (128g) and it was a little sluggish.. I am not doing anything too heavy.... I returned it and took the advice of the salesperson and bought the I5 with the 8 gigs (256g) and it was like night and day... It is extremely fast and I love it now..
