Which version of Windows do I get after a hard-reset?

i have lumia 730 running on 8.1 update 1
when windows 10 arrives....... and i install it on my mobile and then if i reset my mobile after that... will i get 10 only in my mobile or will i be reverted back to 8.1?

You will get Windows 10. There's no mobile equivalent of "restore to factory settings".
