Sunday Morning - My weather radio went off with a blizzard alert at 4am. It's never went off on a snow alert before. It normally goes off only for a tornado warning, so I made a ham sandwich for breakfast. :cool:

At first I thought I read "tomato warning" :grin:

Wonder what Mr. Groundhog will say tomorrow?

Served with giant couscous and simple cucumber and tomato salad and flat bread.

Super Bowl Sunday... I broke out the turkey fryer and went crazy.

IMHO, the star of the show.... Deep Fried Corn on the Cob.

Cornmeal and spice crusted swai,
Hand cut sweet potato fries w/ brown sugar,
Tater tots,
Hush puppies,
and that deep fried corn on the cob that is battered and dredged in flour.
 
That really looks good! Never heard of battered deep fried corn on the cob before. :cool:

It was pretty easy. I got the corn already cut in those 2" sized pieces in the freezer section of my local grocery. Thaw them out the day you will use them.

In one pan mix 2 eggs (just use 1/2 cup egg beaters) and 1/2 cup buttermilk, then whisk in 1/2 a cup of fine corn meal. That makes your batter.

In another pan mix 1/2 cup all purpose flour, 3/4 teaspoon baking powder, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder and 1/2 teaspoon paprika. Blend it all together with a fork. That makes your dredge mix.

Heat your deep fryer to 375*F.

I used rubber food prep gloves. Roll your corn in the batter and then in the dredge mix. Each time be sure to get the ends and coat it all over very well. Stack them on a paper plate then transfer them to your fry basket. Drop them down in the 375* oil for 5 minutes. Let them cool a minute, they get hot!

Serve them on a stick or use corn skewers and watch them disappear.


Honesty, I'd never heard of it either. I was preparing the menu for Super Sunday and I asked the wife if she thought I could deep fry corn on the cob. her eyes lit up and she said that sounds good. A couple of quick internet searches and it was on...
