Merry Christmas to all of you and your families!

Hope Santa will be good to all of you.

I won't be back till late tomorrow or December 26.

My wife cooked a spiral ham and my son the chef did a fried turkey injected and stuffed with herbs and spices. It was delicious. Good thing I got some elastic waist Saints shorts for Christmas.

My son got me a dehydrator. So I'm about learn how to make beef jerky and go nuts with that for a while. Trying to come up with some good flavor combos. And of course some heat.

Dried meats are real popular in France and they are much better for you than the processed meats we have here with all the chemical preservatives. The very first time I was in France I ordered a meat lovers breakfast. I knew enough French to tell it came with beef, ham and sausage. When I got the breakfast, it looked liked I had three different types of jerky on my plate, but they were absolutely delicious. I've really learned to love dried meats.

Are meats cooked in a smoker considered dry meats? Or just smoked meat? I bought a smoker last year after watching too many episodes of BBQ Pitmasters. I've got my brisket down pretty good now. Same with the ribs. Did one smoked chicken that turned out good. My next one that I've been wanting to do for a while is a pork ****/shoulder for pulled pork.

I think they're just considered smoked. I had a smoker years ago and was able to get hamburger and fish down pretty well. One Thanksgiving I did a turkey. It took like twelve hours and turkey was the color of salmon when I carved it. It kind of freaked me out at first.

Had a smoked turkey years ago. My Dad was given one as a gift from a vendor. The meat color was off putting and my wife actually refused to eat it. It was ok and I liked it. But told my Dad to hold out for the ham next time. It was from a place in Mississippi that was known for the smoked meats much like the place from Oklahoma that you mentioned.

Okay so my wife tried to make a barbecue roast beef in the crockpot yesterday. It was bad, real bad, I couldn't even eat it. She usually is real good at making food but something went wrong on this one. The good news is it was just us eating nobody else was here. WOW it was bad.

She did make us a pecan pie, and cookies. Those were real good.

I would guess the crock pot burned the barbeque sauce.

No I think she was supposed to cook the meat before she put it in the crock pot. She put the meat in raw with the BBQ sauce.
