Why does Data Sense show more usage than carrier's data app?

Hi. Why does data sense show alot more data left than the official EE app

it depends on when you set the data sense and maybe EE measures data used in a different way than the phone...

What other way is there to measure other than what data I use?

Like, when you use 1 kB data, data sense counts it and reduce 1 kB, but EE counts it as 10 KB whether you use 1 to 10 kB. That's how most mobile operators works.
