Breakfast today. Caramel Macchiato with Texas toast with avocado, one grilled egg and fresh tomato and basil, quite delicious.

Since last November, I have been to Chicago three times. First visit I ate pizza at Gino's, second visit was Lou Malnati's. To complete the trifecta, I had pizza from Giordano's for lunch today.

Today's breakfast. Homemade lox spread (smoked salmon, green onions, low fat cream cheese, Trinidadian homemade pepper sauce and seasoning salt) and toast.

Awesome! Reminds me I need to make some!

Her bread is very good. Needs more salt, but good nonetheless. She put nuts, bran, oatmeal and flaxseeds in it. Pairs very nicely with the lox I made yesterday.

I always find getting the salt content right difficult. I'd rather error on less than more.

The bread sounds very wholesome. :) Almost too wholesome! LOL!

It's one of the better breads I've eaten, honestly. Good healthy stuff. I try not to eat as much bread these days or else I would have swiped half a loaf this morning.

Surprisingly it isn't as dense as it sounds. Her last bread was much heavier to eat. This go round, thinner slices make great sandwiches. She's going to spend the rest of the week eating homemade bread and lox spread.

I have a couple of friends who make awesome bread at home. I even have the recipe for one...hmmm....maybe I need to invest in a bread maker...

You don't need a bread maker. A hand mixer with dough hooks works just fine and just some time (approx 1hr for first rise, 45 mins for second, 20 mins to cook). Bread makers take all the fun out of making bread.

There's this nice cranberry and walnut loaf that Marks and Spencer makes that I'd like to duplicate. It's very nice.

The GF went old school. No bread maker...by hand, and out of her head since she used to do that as a teen.
