The simplest way would be to keep them in your email. When you exit an area of coverage (or have flight mode on), the emails on your phone will still be there. The only time they might disappear is if you get signal again and the age of the email exceeds the setting in the "download email from" box in the account settings. You can copy/paste the content into a OneNote document if you want to. I do this a fair bit with contact numbers/addresses that I don't really want to create a contact for.
Personally, I'd print out confirmation letters - I don't particularly like handing my phone over to receptionists/officials to look at.
